In my quest to make the tiniest decorations possible, I recently picked up Wilton's Floral Garland Cutter/Ejector Set for fondant and gum paste, which consists of one ejector and five cutters: a bow, a bird, a leaf and two different flowers.
It's very easy to use, and would be a great way to introduce kids, newbies, etc. to cake decorating. These tiny decorations would be perfect for small cookies, petits fours, mini cakes, cake pops, cupcakes, etc. In addition to the set, all you need is a piping bag filled with icing (I used royal) and fitted with a small round tip (I used a #2), a dusting pouch filled with a 50/50 mix of powdered sugar and cornstarch, a 9" fondant roller, and fondant in any color you like (gum paste if the decorations are not going to be eaten).
Start by dusting your work space (use the back side of a gum paste storage board if you don't have a smooth counter).
Roll the fondant out to about 1/16" or thinner.
Insert the ejector into the cutter you're going to use……until the lip of the ejector is flush with the top of the cutter, like this:
You may wish to dust the cutter, if your fondant's at all sticky. Press the cutter firmly down, and wiggle it slightly. Resist the inexplicable urge to push down on the plunger!
Lift the cutter away; the cut-out should still be inside it.
If the edges need neatening, run your fingertip around them.
Pipe a dot of icing on the surface you'd like to adhere the cut-out to, in this case, a Nilla Wafer (I've sure been going through those a lot lately).Position the cutter/ejector assembly over the dot of icing and push down on the plunger.
Pull the plunger away, leaving behind a tiny, unremittingly adorable, flower.
Add a dot of icing to the center. You could then adhere a tiny edible pearl or jumbo sprinkle to the icing, if you like.
If you aren't going to immediately use your ejected shapes, skip the step about piping a dot of icing on the surface of the cake, cookie, whatever, and just eject the shape into the palm of your other hand.
